The big game is so close I can taste it. To say I am excited is an understatement.
Ok. Ok. You must be thinking…
I didn’t know she’s a football fan! I wonder who she’ll be cheering for on Sunday! I bet she loves the Super Bowl because it means snacks on snacks on snacks!
True, I do.
I think the Super Bowl is waaaaaay fun. Getting together, watching the game, rating the commercials, munching on game-day eats. It’s all good.
But while everyone’s been talking about the Broncos and the Seahawks, I’ve been talking about Benton and Opie.
You guys. Puppy Bowl X.
The puppies were on Good Morning America on Monday, and it was cuteness overload. Then I checked Instagram, and it was cuteness overload overload.
And don’t even get me started on the Kitty Halftime Show.
Gaaaaah. I want them all.
You know what else I want? This dip.
If you’ve been an overnight guest at our house in the last six months, you have eaten this dip. Since I discovered it late last summer, it’s been my go-to let’s-snack-and-catch-up dip.
Hot Cheesy Corn Dip comes together so effortlessly. The ingredients are easy to find, so there’s no searching high and low in your grocery store for one particular item and then paying a boatload for said item. I especially enjoy that this dip can be made in just one bowl. Simply dump in all the ingredients, mix well, spread into a baking dish, and bake.
The original recipe called for chipotle in adobo, but I replaced it with barbeque (or is it barbqcue?) sauce. I decided to use the sauce because I don’t like opening an ingredient and only using a tiny bit from it. Barbeque sauce is something that’s always in my fridge. My boys love condiments, so it’s safe to say at my house, the barbeque sauce is the way to go. The sauce still adds the smoky undertones to the dip, and it is quite delicious.
After baking for 20 or so minutes, the dip is steamy hot, cheesy and gooey. I always top it with chopped tomatoes, green onions, and cilantro, but they’re optional. But you would be missing out if you don’t include them. Just sayin’.
So while I watch Puppy Bowl X this Sunday, you can bet I’ll be chowing down on this dip. I doubt it will make it to the start of the Super Bowl.
Who am I kidding? It won’t even make it to the the Kitty Halftime Show.
